Project Packard

OK, I think maybe I should lay out my whole project here and get some feedback.

The car I am starting wtih is a 1948 Packard Deluxe 8 with a 288 straight 8. The motor is in bad shape, so is the original 6 volt electrical system. The rest is in very good shape. So I am going to gut the car and want to put a 350 chevy engine in, along with a TH400 trans, and a Painless wiring system.
I would like to put in front disk brakes and convert the whole system to power brakes.
I would also like to convert to power steering.
I am doing the bulk of the work myself, including any needed welding, and I am working on a shoestring budget.
My goal here is to just get the car on the road first, and then worry about 'prettying it up' in the long term.
I plan on spending a lot of time scrounging through junkyards, and would appreciate any input I could get on suitable donor cars for the various thing I want to do.
I could also use some advice on how to do some things. Like the power steering, can I put power steering in and keep the front end I have, or is it more involved than that?
For those of you who live outside of Southern California, you may not know it, but we have self-serve junkyards here, so I need to know, when I pull a system from a car, just how much of it needs to be pulled.
Really any advice that anyone could give me, would be appreciated.
